There isn’t a lot of difference between hiking and trekking. 

Hiking involves a long walk in the natural environment on a trail. 

Trekking on the other hand involves a long strenuous hike in the wild natural environment and can be cross country (as in, off trails).

So in short, hiking is medium difficulty, long-distance walking,

while trekking is more arduous, adventurous, and in general a tougher type of moving through the natural environment on foot.  So, hiking is easier than trekking.
